Cranberry Gingerbread Spice Loaf

Ho ho ho!!! Just call me Santa Clause becasue I am over here gifting all the tasty holiday recipes to you, all while eating all the cookies and drinking all the fresh cashew milk!

‘Tis the holiday season yet again, and as you may know if you have been following me for a while I FREAKIN LOVE CHRISTMAS!!! I am one of those girls that watches one holiday movie a day, listens to holiday jams on repeat and rocks her Christmas socks from November 12 (post Remembrance Day) all the way till the NEW YEAR!

I can’t even put my finger on what exactly it is that I love so much about it. The bright, twinkly lights. The smells of pine and cinnamon everywhere. The red. The green. The the the….GRINCH! Haha sorry…like I said I am a little Christmas Crazy! My craze is also why I released a Holiday Sweet Treats Ebook last year FOR FREE, you can find that here.

One of the things that I love so much about this time of year is how warming spices (like cinnamon, ginger, cloves, cardamon and anise) and tart flavours (like cranberry, orange, and pomegranate) seem to find their way flawlessly into baked goods. There is something about these flavours that always seem to make me feel cozy at home even when I am out and about! These flavours also happen to be the ones that I myself use A LOT of at this time of year in both my baking AND in my day to day cooking! Annnd one of the BEST things to make with these flavours…..

ANYTHING GINGERBREAD!!!

Now I personally love a good old gingerbread man JUST as much as the next person BUT sometimes you want something that isn’t a complete sugar bomb AND also that maybe you can have as a sweet treat fro breakfast….

Enter my Cranberry Gingerbread Spice Loaf!!!

This loaf is everything holiday spirit and then some!!! Plus it is gluten free, dairy free, and has a vegan option. It also used black strap molasses which has a power house of nutrients like iron, b vitamins, and magnesium. Black strap molasses also happens to be the LOWEST in sugar content/glycemic index out of the sugar cane products AND is almost the exact same to maple syrup in its sugar/glycemic index (it is actually 1 point off). All that being said it does still affect the blood sugar and so it still should be consumed in moderation…but screw moderation…it’s the HOLIDAYS!!!

Cranberry Gingerbread Spice Loaf

Ingredients:

1 1/2 cup Sprouted Second Spring Oat Flour

2 tsp Baking Powder

1 tsp Baking Soda

1 tbsp Gingerbread Spice

1/2 cup Coconut Oil Melted

1/3 cup Maple Syrup

1/3 cup Black Strap Molasses

1 Orange juiced

4 Pasture Eggs beaten, or for VEGAN OPTION: 3 flax eggs

3/4 cup frozen or fresh Cranberries

1/2 cup chopped Pecans

How To:

  1. Preheat oven to 350 degrees.

  2. In a small bowl combine coconut oil, maple syrup, black strap molasses, and eggs (or flax eggs). Once combined add in the juice of one orange.

  3. In separate bowl combine oat flour, baking powder, baking soda, and gingerbread spice. Gently mix in your wet ingredients until mix becomes dough like.

  4. Once mixed throughly fold in pecans and cranberries before placing in a parchment lined loaf pan and baking for 55-65 minutes or until tooth pick can be inserted and comes out clean.

  5. Let cool for about 30 minutes before digging in to all its glory!


Looking to spice this loaf recipe up and take it to the next level? Make the icing from my donut hole recipe found here, and substitute the pumpkin spice with gingerbread spice! Drizzle over top of the loaf or over top individual pieces.

This loaf is a lovely low sugar treat you can take for on the go, a quick breakfast or to a holiday potluck to enjoy with friends and family. Once cooled simply wrap it in a bees wax wrap, or plastic wrap, and eat within 3-4 days if left on the counter. You can also place this in the fridge for up to 1 week and the freezer for up to 3 months!
